    Let’s talk about easy breakfasts. There are two things I make every single week to make breakfast easier including hardboiled eggs and granola. Granola is so healthy and versatile. Sometimes we put it over yogurt, french toast or as an add-in to our store-bought cereal to give it more crunch. When we’re feeling fancy, we make a parfait layered with granola, chia pudding, yogurt, jam and fruit.  This granola recipe is so simple with just 5 base ingredients.     I love risotto anytime, any season. It’s perfect as a complete meal, with whatever seasonal vegetables you have on hand. In the fall, I love to add butternut squash or mushrooms, and in the spring, I add lots of green vegetables including peas, zucchini and broccoli. Sometimes chicken or pancetta, but usually I like it vegetarian. It’s one of my favorite comfort foods and meals to serve when feeding my people.     Roasted Beets and Orange Salad

    I love the combination of roasted beets and oranges.  Beets are earthy and hearty by themselves, but adding juicy oranges balances the salad by adding sweetness, brightness and acidity.  My go-to starter salad when hosting dinner at our house is baby spinach, roasted beets, orange wedges, goat cheese and walnuts.  I top it off with my orange vinaigrette and it’s done.  A vinaigrette should have 3 parts oil and 1 part acidity.  This can vary a bit, but it’s one of those ratios that holds up in most cases.  Oils could include plant-based oil, such as olive, sunflower,  From there, you can do a variety of add-ins or combinations (thyme, parsley, tarragon, basil,…

    Bo Berry Breakfast Casserole

    This might be my new favorite breakfast casserole!  The combination of lemon and blueberries works so well.  The eggs give it substance and the topping is perfectly juicy, crunchy, sweet, and tart.  It reminds me of a french toast casserole, a coffee cake and of course, a Bo Berry biscuit.
